I found this recipe on the CAG website.... many people said it would be a good recipe.
Some said they have done it with Pike and other fish as well...

Cut fish into 1/2 or 3/4 inch cubes. Soak the fish in a brine solution of one gallon white vinegar and one cup of canning salt for 10 days in the refrigerator. Stir once daily.

Then thourghly rinse the fish in cold water and drain well. Pack the fish into pint jars alternating layers of fish and sliced onion rings. Add one teaspoon of pickling spice to each jar and cover with a solution made of one cup white vinegar and one cup of sugar. Dont cook it! Store in the refrigerator for 10 days. Then enjoy!

Sounds DEEEELICIOUS to me! Thanks for the recipe FisherMOM! Might have to start chasing a few of those lip fish.

Who can tell me the best and simplest way to fillet them?

I hate pickled anything. I must admit, the last time I went to applebees they had fried pickles and I said noway and ..............they were damn good.

Sorry Iam not eating any carp .They are fun to catch though . My grandmother used to like to eat suckers .

Grizz theres another one for your DAV dinner pickled carp & beaver. Does it taste like chicken?

Gary. Linda can probably filet them too, but not sure if she can do it right side up or not.

the problem with carp is they have floating bones... so I am told.

You live in potter county and there is some kind of animal you wont eat :D I deep fried one once in a turkey deep fryer and it actually tasted pretty good.
